San Mai steel bar stock, with a core layer of Hitachi White Paper No. 2 high carbon steel, and low carbon steel outer layers.
Hitachi White Paper No. 2 steel is a Japanese blade steel, which has an extremely fine grain allowing the steel to take a razor edge well. It is ideal for knives requiring an extemely sharp edge such as kitchen knive.
This three layer steel billet is 3.47 x 33 x 344 mm. It can be ground to shape as is or forged.
San Mai has a fairly simple heat treat and may be quenched in either water or oil. See here (page 2) for Heat Treat Instructions.
